What Is Raw Milk?

It’s amazing to find out how many people have never heard of raw milk and so therefore don’t know what it is. We have people confront us with this question at Farmer’s Markets.
I am going to explain to you the “simple” definition of raw milk and in our scenario, it is cow’s milk from a purebred Jersey.
Raw milk is the liquid that comes straight from the cow when she is milked.
It is then kept in its original state, not being heated or tampered with in any way, in other words it is not pasteurized.
Raw milk contains higher levels of nutrients, enzymes and minerals than pasteurized milk. When milk is heated, the enzymes are killed and the milk contains much lower levels of Vitamins C and B. These enzymes are necessary to absorb and digest the nutrients in the milk such as lactase to digest lactose, thus where the term “lactose- intolerant” originated. When the pasteurized milk hits your gut, the body immediately says, “This is not a food! What do I do with it?” but with raw milk, it is in its original state and all the enzymes are intact, therefore your body can digest the nutrients better. We have a good handful of customers who are happily drinking milk again and with no side effects that they once experienced with the pasteurized milk.
Raw milk is also unhomogenized. When milk is homogenized, the fat globules are artificially reduced to smaller size allowing the cream to evenly disperse throughout the milk and there is no cream separating line on the top of your jug. When homogenized milk is consumed the fat globules are so small that they are more likely to go directly into the bloodstream and can cause clogging of the arteries. Do you ever see cream lines on top of jugs in the grocery store? No, because the milk usually is pasteurized and homogenized. But raw milk from Golden Rule Dairy will always have a cream line on top!
